Ingredients
- 3/4 cup butter
- 3/4 cup brown sugar
- 3/4 cup granulated sugar
- 3 eggs
- 1 teaspoon salt
- 1 teaspoon vanilla
- 1/2 teaspoon baking soda
- 1 ounce Hawaiian coffee liqueur (or any coffee liqueur)
- 2 ounces softened chocolate (semi-sweet)
- 3/4 cup milk
- 3 1/2 cups flour
- 3 teaspoons baking powder
- 1/2 cup shredded coconut
Instructions
- Preheat oven 350 degrees F.
- Cream together butter and sugars.
- Beat in eggs.
- Add salt, vanilla, soda, liquer, and chocolate.
- Add in milk and then flour, beating alternately. Beat for 3 minutes.
- Add baking powder. Beat 30 seconds.
- Add coconut.
- Bake at 350 degrees F for 45 minutes. You can also bake 30 minutes for regular layer cake. Makes a 9x13 cake.
Icing
- 3 tablespoons butter (softened)
- 2 cups powdered sugar (add more if too soft)
- 1 ounce rum or coffee liqueur
- 1-1/2 ounces heavy cream
- Blend and beat for 3 minutes.
- Spread icing onto cake.
